Viva Noche

Marco Nava wanted to bring the classic tastes of Mexico with a twist of modern-day cocktails to the patrons of Cantina La Veinte. The result is the delicious Tulum De Noche.

Mixing drinks at Cantina La Veinte is Marco Nava’s first stint behind a bar. “I started from the bottom right to where I am now as Head of Bar,” he says. “I’ve always found fun in being a good host at my home and bartending gives me the opportunity to do it at work as well.” Even better, his gig is fast-paced, adrenaline-packed and filled with crazy moments. “I enjoy everything about it, especially turning strangers into family!” Every cantina is a cultural expression of place where it is found gastronomy-wise. Cantina La Veinte is no exception with its extensive menu of Mexican cuisine dishes, offering representatives from each state in the country, with traditional techniques and recipes such as handmade tortillas, sauces made in al molcajete, along with avant-garde techniques such as vacuum cooking, spherification and foam. The décor was carefully selected from the most important craftsmen of Mexico and features the geometry of Mexican Art Deco architecture, highlighted by the monumental bars with one of the largest tequila and mezcal selections in town. The Tulum De Noche is the perfect complement to this combination of tradition and state-of-the-art. “I love how all the ingredients combine to yield a balance of flavor in your mouth,” says Nava of his signature drink. “It’s had a great reception by our clientele!”
