Drinking a concoction crafted by William Thompson is like experiencing a work of art: you’re drawn in by the sight, yet mesmerized by the details that give it life and depth. After a few stints slinging drinks with some of South Florida’s finest cocktail programs, he made his way back to The Local with a new set of tricks up his sleeve. “I love what I do,” he says. “I have the power of making someone’s day better with a small gesture of a drink and a smile.” Layering familiar with less expected flavors and injecting herb-blended surprises here and there, “Will Of Saints” (as he’s known by the loyal following of drink devotees making regular visits) ensures everyone who comes in for a drink leaves with a taste of his latest genius. He knows his guests by name, is ready to serve up their drink of choice and always makes it his goal for anyone shimmying up to the bar feel at ease. “I’m like sage,” he says, “I’m great at cleansing your aura and I go great with most anything.”
