Food Dreamin’

When I was a kid and my dentist told my mother that I was grinding my teeth at night and would need a new mouth guard to protect my pearly-white chompers, she said it was because I was dreaming of food and chewing it in my sleep.

She wasn’t wrong. I’ve had a love affair with food for as long as I can remember. While other kids were eating Happy Meals and ordering of the Kids’ Menu, there were a few years where I refused to eat anything twice. My ever-expanding belly is blessed to have friends and family who continually push the culinary envelop in and out of the kitchen. I remember a few years back someone from Maine asked me what my favorite comfort food was — I didn’t hesitate with a response: oxtail. My tastes have evolved throughout the years, but oxtail has been my most loyal culinary wingman for the majority of my life. I can eat it with pretty much anything, anywhere — grape jelly, brown rice, noodles, charred carrots…anything. I like oxtail so much that I actually missed a flight back home during a trip to the Virgin Islands just so I could take my sweet time munching on what locals called the best oxtail stew in the world. It was good enough to make me extend my trip so I could try it just one more time the next day. It was totally worth it.
